Breakfast Casserole

1 lb. of your favorite Meyer’s Smoked Sausage, sliced thin – 1/4 in. or less. (NOTE: Sausage is already fulled cooked, so just toss it right in the mix!)

10 eggs

1 pint cottage cheese

1 lb. shredded cheddar or monterey jack cheese

7 oz. blended green chiles

1 tsp baking powder

3/4 tsp salt

1 stick melted butter

1/2 c. flour

1/2 tsp paprika

1/4 tsp garlic

1/2 tsp fine black pepper

2 cups potatoes

Melt butter. Beat eggs and mix with rest of ingredients. Bake at 350 for 1 hour, 5 min. Let set for 30 minutes and serve.
